Tacos – Beef, Pork and Chicken

We had a lot of fun this Friday.  Tacos were quite the hit.  We had ground beef tacos, chipotle ground pork tacos, chicken-mango tacos, guacamole, tomato salsa and mango salsa.  I used flour tortillas and hard taco shells.   It was so simple to prepare for our get together.  Very relaxing and enjoyable evening.  Only thing I ran out of was the flour tortillas.  Oops!

I got this idea from my Food Network magazine.  This is the only magazine I get and I read it front to back. This month was the “50 Tacos” issue.

I made the salsas the night before.  Here you go:

Salsa

3 Roma Tomatoes, chopped
2 cloves of garlic, minced
1 T jalapeño pepper, finely chopped
1/4 – 1/2 bell pepper, finely chopped
2 T red onion, minced
1 T olive oil
1/2 lime, juiced
1 T Chili Powder
1 green onion
1 T parsley or cilantro (I am not a fan of cilantro.  I know that is what I should use, but NO)

Mix all together.  Better if refrigerated overnight.

Mango Salsa

1 mango, diced
2 T red onion, minced
1 green onion
1 teaspoon jalapeño, minced
1/2 lime, juiced
salt to taste

Now for the tacos.  These were so Simple AND Delicious!  It takes no time at all and everyone was very happy!

Ground Beef

Saute 1 chopped onion and 2 minced garlic cloves in 2 Tablespoons olive oil.  Add 1 Tablespoon chili powder, 2 teaspoons cumin and 2 teaspoons of coriander; cook 30 seconds.  Add 1 pound ground beef and cook until browned.  Salt to taste.

Chipotle Pork

Saute 1 each chopped red onion and chipotle in adobo sauce in oil (I used 2 Tablespoons of olive oil).  Add 2 teaspoons each cumin and coriander; cook 30 seconds.  Add 1 Tablespoon of adobo sauce and 1 pound ground pork, cook until browned.  Salt to taste.

Chicken Mango

Season 1 pound boneless chicken breasts with salt and cayenne, grill and slice.  Serve in flour or hard taco shells with the Mango salsa.

This was a huge hit.  Everyone really enjoyed the tacos.  Only negative was the pork and chicken could have used more heat.  Good thing we have habanero hot sauce.  🙂  We will definitely do another taco night!

Pickled Eggs

Kent has had pickled eggs since he was a little boy.  I did not know anything about pickled eggs until I met him 30 years ago.  His mom always made these at Easter time.  He insisted I post this on my blog.  He absolutely loves these and they are, of course, Simple and Delicious!  🙂

 

Pickled Eggs

6 hard boiled eggs
2 cups beet juice
1/2 cup apple cider vinegar
2 Tablespoons sugar

1.  6 eggs.  Place eggs in pan with 1 inch of water above eggs.  Have water come to boil.  Turn off heat, place lid on pan and let sit for 10 minutes.   After 10 minutes put eggs in bowl with ice and let sit for 5 minutes.  Then eggs are ready to remove shell.

2.  In the meantime; While eggs are boiling.  Mix beet juice, apple cider and sugar.

3.  When eggs are shelled add to beet juice, apple cider and sugar mixture.

4.  Let set overnight and enjoy!
