Philly Cheese Steak Sandwich

I checked my facebook this morning and as always Foodimentary is on there.  November 3rd is National Sandwich Day.  I said to my hubby “let’s have sandwiches for dinner!  What would he enjoy?  He said he wanted shaved steak sandwich.  So, it was obvious we would have Philly Cheese Steak Sandwich. First step was to get the shaved steak.  I called Copps and Festival Foods.  They could not accommodate our request for 3# (I wanted extra for the next time) of shaved Ribeye steak!!  What would we do?  We could do it ourselves but honestly I was kind of not into that.  Kent mentioned Maplewood Meats so I called there and of course they were able to save the day!!   So, here is a really Simple and Delicious and FAST dinner;

Philly Cheese Steak Sandwich

4 – sub or club rolls.
1 1/2# shaved Ribeye (Ribeye is one of the more flavorful cuts of beef, due to the muscle getting a lot of exercise during its life, unlike the tenderloin.  Its marbling of fat makes this very good for slow roasting and it also goes well on a grill cooked to any degree AND Philly Cheese Steak Sandwiched)
2-large onions (I used spanish onions – they are generally larger.  If they had Vidalia I would have used those instead)
2- green peppers
Provolone or mozzarella
Salt and Pepper

I carmelized the onions and peppers in 2 Tablespoons of canola oil.  Top with salt.  I use Kosher salt.  Cook over medium to low heat mixing frequently.  Carmelizing takes up to 30 minutes but it is way worth it.  (FYI: If the pan gets too dry add 1-2 Tablespoons of water.)

When the peppers and onions are close to being done get out your cast iron skillet.

Add 2 Tablespoons of canola oil to the skillet medium high heat.  Add 5 ounces of shaved ribeye to the skillet.  (I used 6-7 ounces and Kent thought that was great.  Kyle, Eric and Martin thought a little less meat next time so I chose 5 ounces for you).  The steak doesn’t take long to fry, 5 minutes if that.  After it is done move the meat together and top with your cheese choice.  Put a lid on the skillet so the cheese will melt.  

Hollow out one side of the roll.  When the cheese has melted put the steak/cheese in the hollowed out side of roll.  Top with onions and peppers.  We don’t use any other condiments.  If you want you could put ketchup or marinara sauce on your sandwich too!
