Roasted Potatoes – Simple and Delicious!

03/30/2014;  Updated the recipe to these roasted potatoes today.   Hope you enjoy them.  I know we do!!

Roasted Potatoes

6-8 medium sized potatoes (quartered) (2 1/2 pounds)
1 small onion
1 clove garlic
1 teaspoon rosemary (I use fresh.  Dried are fine to use.)
1/2 teaspoon basil (I used fresh if I have it.  If not, dried.)
1/2 teaspoon oregano (Of course, fresh would be great.  If not dried.)
1 teaspoon fresh thyme (If you have it great.  If not, no big deal!)
1 teaspoon kosher salt (
1/4 teaspoon pepper
juice of 1/2 lemon
2 Tablespoons olive oil


1.Preheat oven to 425 degrees
2.Put all of the above ingredients in a bowl.  Mix together.
3.Using a flat container (cookie sheet), spread out the potatoes into a single layer.  If they are over crowded they will not brown.March 31 2014 007
4. Roast 30-45 minutes until brown. No longer than 45 minutes!
